What's the best way to remove coffee stains and smell from carpet?

Meguiar's may have something equally good, but the best thing I have used for hot chocolate and coffee spills (and other spills) is Simonize Upholstery and Carpet cleaner.

I like using steam. it removes the stains quickly. I would try that first to remove the smell as well\

Our D106 Tannin Stain Remover in our Professional Carpet & Upholstery Cleaning System works excellent for coffee stains. This is used RTU in a dispenser bottle like our D9916. It is best to use a mix of D106 at 20:1 in a spray bottle after treating the stain to neutralize the carpet fibers. A light mist & a light brush is all that is needed to neutralize. Noticed you mentioned how to remove the smell as well. Meguiar's has two options when it comes to Odor Elimination, performance from both are best obtained of course when the stain or source of smell is cleaned & eliminated first:
