I am brand new to detailing and Meguiars. I see three different Meguire lines, Gold, Classic, and New tech. What are the differences in them is it a hobby to pro thing.

Well, there are more lines than that, but nothing to worry about. All are good and work together, so you can mix and match. Just have to look at a product to fill each step, and then you are good.
The big difference would be the Gold Class wax has some carnuba in it, and the Nxt wax is synthetic only.
If you are brand new, look at this:
1. Wash - Gold Class Soap, 2 buckets a Grit Guard if possible
2. Clay - Smooth Surface Clay kit
3. ColorX
4. Wax - Nxt 2.0 or Gold Class+2017 Subaru WRX Premium - WR Blue
